Sausage & Tortellini Soup

A quick and simple soup to warm up those cold nights.

Cold fronts call for warm meals! This cozy soup recipe always does the trick. Tinged with a taste of Tuscany, this Tortellini Soup is easy to whip up and quick to warm the soul.

  • 1 large stock pot
  • 1 saucepan
  • 1 medium saucepan


  • 80 ounces chicken broth
  • 2 pounds ground sausage
  • 18 ounces tortellini (cheese and spinach tortellini or sausage tortellini)
  • 6 cups spinach
  • 1/2 cup sundried tomatoes
  • 2 Tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste


  • In the large saucepan, brown the sausage.
  • In the medium saucepan, sauté’ the spinach in 2 Tablespoons olive oil

  • In the large stock pot, boil the chicken broth.  Once at a boil, add the tortellini and cook for ~7 minutes.
  • Add the sausage and spinach to the chicken broth.  If adding sun-dried tomatoes to the soup, add them now.
  • Allow the soup to simmer for 15 minutes then serve.
