Chicken Pesto Pasta
A pasta perfect recipe that blends pesto and pasta together perfectly.

Looking for an easy yet delicious recipe for dinner? This chicken pesto pasta is a family favorite. A happy accident created when I couldn't find ingredients and had a wedding shower to get to, this recipe can easily be modified to fit several occasions and flavor palettes. And it pairs perfectly with rosemary sourdough bread.

Equipment
- Large pot
- Pasta strainer
- 9X13 baking dish
- Frying pan
Ingredients
- 4-5 chicken breasts
- 1 pound (16 ounces) pasta (you can make your own with this recipe)
- 7-8 ounces pesto
- 7-8 ounces feta cheese
- 2-3 ounces sliced black olives (optional)
- 4-6 slices bacon, chopped (optional)
- 1 tomato, chopped (optional)
- 1/3 cup olive oil
- 1 Tablespoon garlic powder
- 1 Tablespoon oregano
- 2-3 teaspoons pepper
- 2 1/2-3 1/2 teaspoons sea salt
Instructions
- Drizzle ~1 Tablespoon of olive oil in a 9X13 pan.
- Season chicken breasts with garlic powder, oregano, 1-2 teaspoons pepper and 1 1/2-2 teaspoons salt.
- Place seasoned chickens in pan and bake at 400 F for 30 - 40 minutes depending on size of chicken breasts (or bake in an instapot for 8-9 minutes at high pressure)
- While the chicken is baking, prepare the bacon and boil the pasta. To boil the pasta, bring a pot of water to boil and season with ~1 teaspoon pepper, ~1 teaspoon sea salt, and 1-2 teaspoons of olive oil. Boil until pasta is al dente.
- While pasta boils, place the strips of bacon in a frying pan and cook to desired crispiness (~6-7 minutes). Chop bacon.
- Shred the baked chicken into half inch pieces.
- Drain the pasta.
- Toss the chicken, pasta, feta, remaining olive oil, olives, bacon, and tomatoes and place into serving dish.
